Barley in Israel was the poor mans crop for course bread, Wheat is for fine bread. They look almost identical. Barley can be cooked right off the stalk, wheat must be milled or refined. Barley is harvested in the spring when it is yellow-white, wheat in the fall when it turns golden brown. Barley used mostly for making alcohol, wheat for bread. Barley has a shorter growing spell and tolerates cold better than wheat, so it is preferred in Tibet.
